Where to find ingredients
You can find all necessary ingredients at local grocery stores and markets. Look for hearts of palm and olives in the canned goods or international sections. Standard pantry items like flour, butter, and seasonings are available in the baking and spice aisles.
Preparation method
- Mix the flour, butter, and salted water gradually in a medium-sized bowl.
- Work the mixture with your hands until you achieve a uniform dough that no longer sticks to your fingers.
- Knead the dough on a lightly floured surface until it becomes smooth and homogeneous.
- Cover the dough and let it rest for 10 minutes to make it easier to roll out.
- Heat the olive oil in a pan and sauté the onion for 2 minutes over high heat.
- Add the tomato, hearts of palm, salt, pepper, fresh herbs, oregano, and olives to the pan.
- Cook the filling for 5 minutes over medium heat, stirring well, then turn off the heat.
- Allow the filling to cool completely before assembling the empanadas.
- Roll out portions of the dough using a rolling pin until it reaches a 2mm thickness.
- Cut circles out of the dough using a pastry cutter or the rim of a large glass.
- Distribute the filling in the center, fold the dough over, and seal the edges by pressing with your fingers.
- Arrange them on a baking sheet, brush with the egg yolk, and bake in a preheated oven at 200°C for 25 minutes.
Observations
The empanada is a classic staple in Brazil, cherished for its versatility. This version offers a melt-in-your-mouth dough paired with a simple-to-prepare hearts of palm filling. Feel free to experiment with different fillings such as chicken, ground beef, or tuna. The secret to success is ensuring the filling is completely cold before assembling; this prevents the dough from softening and ensures it stays sealed and perfectly crispy during the bake.
