Ingredients
3 cups of guava pulp, scooped from the skin
¾ cup of honey
1 cup of water
Lime juice to taste
¾ cup of honey
1 cup of water
Lime juice to taste
Where to find ingredients
You can find fresh guavas at local markets or produce stalls; choose ripe fruits with fragrant skins. Honey is widely available in supermarkets, and lime is a staple in local greengrocers. As a substitute for fresh guava, high-quality unsweetened guava pulp can sometimes be found in the frozen section of specialty food shops.
Preparation method
- Place the guava pulp, honey, and water into a large heavy-bottomed pot.
- Bring the mixture to a boil over medium-high heat.
- Reduce the heat to low to maintain a gentle simmer for 10 minutes.
- Stir the contents occasionally and skim off any foam that rises to the surface using a spoon.
- Transfer the cooked fruit base into a blender.
- Pulse on low speed just enough to process the pulp without crushing the hard seeds.
- Pass the purée through a fine-mesh sieve positioned over a clean bowl.
- Use a wooden spoon to press the mixture through, extracting all the liquid while retaining the seeds and excess pulp in the sieve.
- Discard the seeds and remaining fibrous material left in the sieve.
- Finish by stirring in the fresh lime juice to the strained purée.
Observations
A simple culinary preparation that transforms the pulp of the fruit into a silky, versatile coulis, perfect for enhancing desserts or a variety of dishes.
