Ingredients
3 cups fresh guava pulp, scooped from the skins
¾ cup honey
1 cup water
Lemon juice to taste
¾ cup honey
1 cup water
Lemon juice to taste
Where to find ingredients
Guava pulp: Look for ripe, fresh guavas in the tropical produce section of your local supermarket or at specialty Latin American grocers. Honey: Readily available in the baking or breakfast aisle of any grocery store. Lemon juice: Found in the produce section; fresh is always recommended over bottled for the best flavor.
Preparation method
- Combine the guava pulp, honey, and water in a large saucepan
- Place over medium-high heat and bring the mixture to a boil
- Lower the heat to maintain a gentle simmer for 10 minutes
- Stir occasionally and use a spoon to skim off any foam that rises to the surface
- Carefully transfer the cooked mixture into a blender
- Pulse on low speed just enough to break down the pulp without crushing the hard seeds
- Set a fine-mesh sieve over a bowl and pour the purée through it
- Use a wooden spoon to press the mixture through the sieve, extracting the liquid while catching the seeds and fibrous bits
- Discard the seeds and tough pulp remaining in the sieve
- Finish by stirring in fresh lemon juice to taste before serving
