Where to find ingredients
Most ingredients like flour, sugar, butter, and cream cheese are readily available at any major Ghanaian supermarket (such as Shoprite or Palace Supermarket). For authentic ingredients: 'Goiabada' (guava paste) and 'Queijo Minas' (a fresh, mild Brazilian white cheese) are specialty items; look for them in the imported goods section of premium supermarkets or in niche international delis. As a local substitute for Minas cheese, a firm but mild white cheese like Queso Fresco or a very fresh, unsalted paneer can work. If guava paste is unavailable, a thick, reduced guava jam may serve as a replacement for the centre.
Preparation method
- Preheat your oven to 180°C
- Grease your ramekins well with butter and dust with flour, tapping out the excess
- In a mixing bowl, beat the eggs and sugar together until smooth
- Add the grated Minas cheese to the bowl and fold it in thoroughly
- Incorporate the cream cheese and melted butter, mixing until you have a uniform batter
- Gently fold in the flour until the batter is smooth and well-combined
- Pour the mixture into the prepared ramekins, filling them just over halfway
- Place a cube of goiabada in the centre of each ramekin
- Cover with the remaining batter, being careful not to overfill past the rim
- Bake in the preheated oven for about 5 minutes, until the sides are set but the middle remains soft and molten
- Carefully remove from the oven, turn out onto plates while still hot, and serve immediately
- Optional: serve with a side of guava or passion fruit coulis if you like
Observations
This dessert brings together the iconic Brazilian "Romeu e Julieta" flavour profile—a sophisticated contrast between tangy cheese and sweet, fruity guava. It is a velvety, rich treat that is surprisingly simple to whip up at home. Best enjoyed straight from the oven to ensure that signature molten centre.
