Where to find ingredients
You can find all these ingredients at local grocery stores and supermarkets in the produce and baking aisles. Look for hearts of palm and olives in the canned goods section.
Preparation method
- Gradually combine the flour, butter, and salted water in a medium bowl.
- Work the mixture with your hands until you achieve a uniform dough that no longer sticks to your fingers.
- Knead the dough on a floured surface until it is smooth and homogeneous.
- Cover the dough and let it rest for 10 minutes to make it easier to roll out.
- Heat the olive oil in a pan and sauté the onion for 2 minutes over high heat.
- Add the tomato, hearts of palm, salt, pepper, herbs, oregano, and olives.
- Cook the filling for 5 minutes over medium heat, stirring well, then turn off the heat.
- Allow the filling to cool completely before assembling the empanadas.
- Roll out portions of the dough using a rolling pin until they are 2mm thick.
- Cut the dough into circles using a pastry cutter or the rim of a large glass.
- Place the filling in the center, fold the dough over, and seal the edges by pressing with your fingers.
- Arrange on a baking sheet, brush with the egg yolk, and bake in an oven preheated to 200°C for 25 minutes.
Observations
The empanada is a classic staple that has earned its place on Brazilian tables due to its incredible versatility. This version features a dough that literally melts in your mouth and a heart of palm filling that is incredibly simple to prepare. Feel free to experiment with the filling by using chicken, beef, or tuna instead. The key secret to success is ensuring the filling is completely cold before you begin sealing the dough; this helps maintain the structure, preserves the crispiness, and prevents them from bursting open in the oven.
