Where to find ingredients
You can find these fresh ingredients at local food markets or major supermarkets in the produce and international aisles. For the cassava, check the vegetable section; it is also available frozen in most specialty stores.
Preparation method
- Cut the eggplants into small cubes and place them in a colander.
- Sprinkle salt over the eggplant and let it rest for 2 to 3 hours.
- Rinse the cubes well, gently squeeze to remove excess water, and set aside.
- Boil the peeled cassava in water alone until it becomes very soft, then set aside.
- Sauté the garlic, onion, tomato, and bell pepper in olive oil, then add the eggplant, bay leaf, pepper, and bouillon, cooking until browned.
- Blend the cooked cassava with the coconut milk in a blender, stir into the vegetable mix, adjust the salt, garnish with fresh parsley and green onions, and serve while piping hot.
Observations
This eggplant stew is a fantastic, light alternative to the classic shrimp version, retaining all the rich texture thanks to its cassava base. The secret to success lies in letting the salted eggplant rest, which removes its natural bitterness and ensures the perfect bite. This is a comforting dish, practical for everyday meals and best served with fluffy white rice.
