Where to find ingredients
Find fresh vegetables and aromatics at local wet markets or supermarket produce sections. Cassava (often sold as tapioca root) can be found in the frozen or fresh produce aisles of most major supermarkets in Singapore. Use fresh coriander and spring onions as a local substitute for the traditional Brazilian 'cheiro-verde' herb blend.
Preparation method
- Cut the eggplants into small cubes and place them in a colander
- Sprinkle salt over the eggplant and let it rest for 2 to 3 hours
- Rinse the cubes thoroughly, squeeze gently to remove excess water, and set aside
- Cook the peeled cassava in water until very tender and set aside
- Sauté the garlic, onion, tomato, and bell pepper in olive oil, then add the eggplant, bay leaf, pepper, and bouillon, sautéing until browned
- Blend the cooked cassava with coconut milk in a blender, stir into the vegetable mixture, adjust the salt, garnish with fresh herbs, and serve while piping hot
Observations
This eggplant bobó is a fantastic, light alternative to the classic shrimp version, retaining all its signature creaminess thanks to the cassava base. The secret to success lies in salting the eggplant beforehand, which removes any natural bitterness and ensures the perfect texture. It is a comforting, practical everyday meal that is best served alongside fluffy white rice.
