Ingredients
1 kg kabocha or butternut pumpkin
2 cloves garlic
2 tbsp extra virgin olive oil
1 tsp salt
2 cloves garlic
2 tbsp extra virgin olive oil
1 tsp salt
Where to find ingredients
You can find fresh pumpkin at local wet markets or supermarket produce sections. Butternut pumpkin is a reliable substitute for traditional Brazilian abóbora de pescoço, offering a similar sweetness and texture.
Preparation method
- Peel the pumpkin and cut the flesh into roughly 2 cm cubes.
- Finely mince the garlic cloves.
- Heat a large pot or frying pan over medium heat with the olive oil.
- Add the garlic and sauté for 1 minute just until fragrant, taking care not to let it burn.
- Add the pumpkin cubes and salt to the pan.
- Stir the ingredients occasionally for 10 minutes, until the pumpkin begins to soften.
- Cover the pot with a lid and reduce the heat to the lowest setting.
- Steam for 5 minutes until the pumpkin is completely tender.
- Remove the lid and continue stirring while mashing the pieces with the back of a wooden spoon until you reach your preferred texture.
- Turn off the heat and serve immediately.
Observations
With a pleasingly textured consistency, this mash serves as a practical and wholesome alternative to elevate your everyday meals.
