Gratinated Baked Jiló (Jiló ao forno gratinado)

Ingredients

6 medium jilós
1 medium onion, diced
2 garlic cloves, minced
1 medium tomato, diced
2 tablespoons butter
Salt to taste
1 whole egg
Grated parmesan cheese to taste

Where to find ingredients

You can find jiló at specialty produce markets or select grocers that stock Brazilian imports. Standard items like butter, onions, garlic, tomatoes, and parmesan are available at any major local supermarket or wet market in the fresh produce and dairy sections.

Preparation method

  1. Wash the jilós and slice them into thin rounds.
  2. Heat the butter in a pan over medium heat.
  3. Sauté the onion and garlic until they are golden.
  4. Add the diced tomato and salt, cooking for a few more minutes.
  5. Crack the egg into the sauté and stir quickly until fully incorporated.
  6. Grease a baking dish with butter.
  7. Arrange half of the jiló slices in the bottom of the dish.
  8. Spread half of the sautéed mixture over the slices.
  9. Sprinkle a layer of grated parmesan cheese over the top.
  10. Repeat the process with the remaining jiló and sautéed mixture.
  11. Finish with a final layer of grated parmesan cheese.
  12. Bake in a preheated oven at 180°C for approximately 20 to 25 minutes, or until the top is golden and the jiló is tender.

Observations

Baked jiló is a traditional Brazilian preparation that beautifully balances the fruit's unique, slightly bitter profile with savory aromatics and a rich cheese finish. By layering thin slices with a flavorful sauté and topping it all off with parmesan, this dish becomes a comforting vegetarian addition to any meal. This streamlined version is perfect for everyday cooking, requiring minimal effort to yield a deeply satisfying and aromatic result.
