Where to find ingredients
Baby marrow, lemons and fresh vegetables can be found in supermarkets, vegetable markets and greengrocers. Coriander seeds, olive oil and salt are commonly available in supermarkets and general food shops. If baby marrow is labelled as courgette or zucchini, it can be used as the same ingredient.
Preparation method
- Wash the baby marrow skin well under running water using a vegetable brush
- Dry it with a clean tea towel
- Trim and discard the ends
- Cut the baby marrow crosswise to separate the thicker part from the thinner end
- Slice the thick part in half lengthwise and cut each half into three strips to make batons
- Cut the thin part in half crosswise so all the pieces are a similar size
- Cut each of these pieces into four parts
- Heat a non-stick frying pan over medium heat
- Add a drizzle of olive oil and arrange the baby marrow pieces with the cut side facing down
- Grill for about 2 minutes until golden
- Lightly crush the coriander seeds in a mortar to release their aroma
- Turn the batons with tongs to brown the opposite side
- Add the coriander seeds, season with salt and add a little more olive oil
- Sauté for another 1 minute until the baby marrow is tender and seasoned
- Finish by turning off the heat and stirring in the lemon juice
- Serve immediately
