Where to find ingredients
Find these ingredients in your local supermarket's produce, butcher, and pantry aisles. You can substitute ground beef with ground turkey or a plant-based alternative if preferred.
Preparation method
- Wash the peppers well, cut off the top part to form a lid, and carefully remove all internal seeds.
- In a pan, heat the 30 ml of oil and sauté the onion and garlic until lightly browned.
- Add the ground beef to the pan and stir constantly so that it stays very loose during cooking.
- Cook until the liquid from the meat and onion has almost completely evaporated, keeping the meat moist and seasoned.
- Remove the meat from the heat, mix in the olives, parsley and scallions, salt, and black pepper, and finish by incorporating the chopped hard-boiled eggs.
- Fill each pepper generously with the ground beef mixture and place them in a baking dish previously greased with oil.
- Cover the baking dish with aluminum foil and place in a preheated oven for 10 minutes so the peppers cook in the steam.
- Remove the aluminum foil carefully and let bake for another 5 minutes to finish cooking and lightly brown.
