Ingredients
2 pork chops
1 tbsp salt
1 tsp sugar
2 tsp paprika
2 bay leaves
2 cups water
4 sprigs fresh sage
1 tbsp olive oil
Freshly cracked black pepper to taste
1 tbsp salt
1 tsp sugar
2 tsp paprika
2 bay leaves
2 cups water
4 sprigs fresh sage
1 tbsp olive oil
Freshly cracked black pepper to taste
Where to find ingredients
You can find fresh pork chops at any local butcher or the meat counter of major supermarkets. Fresh sage is readily available in the herb section of grocery stores or at local markets. Look for sweet paprika in the spice aisle. Bay leaves are usually found in the dry spice section, and standard pantry staples like olive oil, salt, and sugar can be picked up at any local grocery shop.
Preparation method
- Place the pork chops in a medium-sized mixing bowl
- Sprinkle the salt, sugar, and paprika evenly over the meat
- Massage the seasoning into the chops to ensure it really gets into the meat
- Add the bay leaves and pour in the water until the chops are fully submerged
- Cover the bowl with a plate to seal
- Let them soak for 20 minutes at room temperature so the meat stays hydrated
- Lift the chops out of the marinade using kitchen tongs
- Pat the meat very dry with paper towels to ensure a good sear
- Place a large frying pan over medium heat
- Add the olive oil once the pan is nice and hot
- Carefully lay the chops in the pan, making sure they have enough space
- Season with black pepper to your liking
- Toss the sage sprigs into the pan right next to the meat
- Sear for about 3 minutes on each side until they are beautifully golden
- Serve your pork chops straight away
Observations
This recipe uses a quick brine-style marinade that keeps the pork chops incredibly tender and juicy during the sear. The bold, smoky notes of the paprika balanced by the earthy aroma of fresh sage and bay leaves make this a standout, no-fuss meal for busy days.
