Where to find ingredients
Find fresh vegetables and herbs in the produce section of your local supermarket. Cassava, also known as yuca, can typically be found in the tropical produce section or in the freezer aisle of international grocery stores. Use vegetable bouillon as a base seasoning; if you prefer, you can substitute it with fresh herbs or a homemade vegetable stock.
Preparation method
- Cut the eggplants into small cubes and place them in a colander
- Sprinkle salt over the eggplant and let it rest for 2 to 3 hours
- Rinse the cubes well, gently squeeze to remove excess water, and set aside
- Boil the peeled cassava in water alone until very soft and set aside
- Sauté the garlic, onion, tomato, and bell pepper in olive oil, then add the eggplant, bay leaf, pepper, and bouillon, sautéing until browned
- Blend the cassava with the coconut milk in a blender, mix into the sautéed base, adjust the salt, finish with fresh herbs, and serve while piping hot
Observations
The eggplant bobó is an excellent and light alternative to the classic shrimp version, maintaining all the signature creaminess from the cassava base. The key to success is letting the eggplant rest with salt, which removes its natural bitterness and ensures the perfect texture. It is a comforting dish, practical for everyday meals and ideal to serve with a fluffy side of white rice.
