Honey-Glazed Roasted Carrots

Ingredients

3 carrots
2 tablespoons honey
1 tablespoon lime juice
1/2 cup water
1.5 teaspoons olive oil
1 tablespoon cold butter
1/4 teaspoon ground allspice
Salt and freshly ground black pepper to taste
Mint and parsley leaves, to garnish

Where to find ingredients

Carrots, honey, olive oil, butter, salt, and black pepper can be found at any local supermarket or grocery store. Lime juice can be fresh or store-bought. Allspice is available in the spice aisle. Fresh mint and parsley are usually in the produce section.

Preparation method

  1. Peel the carrots and halve them lengthwise
  2. Cut each half lengthwise again, into quarters
  3. Heat a large non-stick frying pan over low heat
  4. Add the olive oil and arrange the carrots cut-side down
  5. Season with salt and let them brown for 7 minutes without moving
  6. Turn the carrots using tongs
  7. Season again with salt and black pepper
  8. Let the other side brown for another 3 minutes
  9. Whisk together the honey, allspice, lime juice, and water in a separate bowl
  10. Pour this mixture into the frying pan
  11. Cover and cook for approximately 10 minutes
  12. Watch until the carrots are cooked but still firm, and the liquid has reduced by half
  13. Turn off the heat and stir in the cold butter
  14. Gently swirl the pan so the butter melts and forms a glossy sauce
  15. Ensure the carrots are well coated in the glaze
  16. Garnish with mint and parsley leaves before serving

Observations

This recipe transforms humble carrots into a sophisticated dish with simple steps. The secret lies in slow cooking with the glaze, which ensures a tender yet firm texture, finished with a butter emulsion for a glossy sheen and intense flavour.
