1/3 cup roasted, skinless, unsalted peanuts
2 garlic cloves
Extra virgin olive oil to taste
1/4 teaspoon cayenne pepper
Salt to taste
1/3 cup roasted, skinless, unsalted peanuts
2 garlic cloves
Extra virgin olive oil to taste
1/4 teaspoon cayenne pepper
Salt to taste
Where to find ingredients
You can find fresh greens like escarola at local vegetable markets or supermarket produce sections. Look for quality roasted peanuts in the snack aisle of grocery stores; if you only find salted ones, just adjust the added salt accordingly.
Preparation method
- Separate the escarola leaves and wash them thoroughly under running water.
- Dry the leaves well using a salad spinner to ensure they are completely moisture-free.
- Stack about 5 leaves, roll them into a cylinder, and slice into 3 cm strips.
- Crush the garlic cloves with the flat side of a knife to peel, keeping them whole to infuse the oil.
- Heat a large non-stick skillet over medium heat.
- Add a splash of olive oil, the peanuts, cayenne pepper, and a pinch of salt.
- Sauté the peanuts for about 3 minutes until they are lightly golden.
- Remove the peanuts from the pan and set them aside in a small bowl.
- In the same pan, still over medium heat, add 1 1/2 teaspoons of olive oil and one garlic clove.
- Sauté the garlic for 1 minute just to perfume the oil.
- Add half of the escarola, season with a pinch of salt, and sauté for 2 minutes.
- Stir occasionally until the leaves are slightly wilted while retaining their texture, avoiding excess water release.
- Remove the first batch of escarola and repeat the process with the remaining leaves.
- Transfer the sautéed escarola to a serving platter and finish by sprinkling the spicy peanuts on top before serving.
Observations
This side dish features a satisfying crunch and a subtle spicy kick that elevates the humble greens. It is an excellent choice for adding variety to your daily vegetable servings.
