Extra virgin olive oil to taste
Salt to taste
Where to find ingredients
You can find fresh zucchini, lemons, and pantry staples like olive oil and salt at local open-air markets or general grocery stores in Lesotho. Coriander seeds are typically available in the spice aisle or at local traders who stock bulk herbs and spices.
Preparation method
- Thoroughly wash the skin of the zucchini under running water using a vegetable brush
- Pat dry with a clean kitchen towel
- Trim off and discard the ends
- Cut the zucchini crosswise to separate the thicker end from the thinner tip
- Slice the thick part lengthwise in half and cut each half into three strips to create sticks
- Divide the thin part in half crosswise so all pieces are of similar size
- Cut each of these pieces into four
- Heat a non-stick frying pan over medium heat
- Add a drizzle of olive oil and place the zucchini pieces cut-side down
- Grill for about 2 minutes until nicely browned
- Lightly crush the coriander seeds in a mortar to release their aroma
- Turn the zucchini sticks using tongs to brown the opposite side
- Add the crushed coriander seeds, season with salt, and drizzle with a little more olive oil
- Sauté for 1 more minute until the zucchini is tender and well-seasoned
- Finish by turning off the heat and incorporating the lemon juice
- Serve immediately
