Where to find ingredients
You can find these ingredients at local supermarkets, greengrocers (for fresh produce), and local butcher shops in your neighborhood.
Preparation method
- Wash the bell peppers well, cut off the top part to form a lid, and carefully remove all the internal seeds.
- In a pan, heat the 30 ml oil and sauté the onion and garlic until lightly golden.
- Add the ground beef to the pan and stir constantly so that it stays nice and crumbly during cooking.
- Cook until the liquid from the meat and onion has almost completely evaporated, keeping the meat moist and seasoned.
- Remove the meat from the heat, mix in the olives, parsley and scallions, salt, black pepper, and finish by incorporating the chopped hard-boiled eggs.
- Stuff each bell pepper generously with the ground beef mixture and place them in a baking dish previously greased with oil.
- Cover the baking dish with aluminum foil and bake in a preheated oven for 10 minutes so that the bell pepper steams.
- Carefully remove the aluminum foil and let it bake for 5 more minutes to finish cooking and lightly brown.
