Where to find ingredients
Topside beef (lagarto) is a lean cut of beef found easily at any local butcher or large supermarket meat counter. Beef stock cubes are readily available in the seasonings aisle of any neighbourhood duka or grocery store. Cooking cream or thickened cream can be found in the dairy fridge section. For the best result with the mashed potatoes, choose waxy or all-purpose potatoes from the fresh produce section of your local market (soko).
Preparation method
- Season the beef to your liking. If you prefer a deeper flavour, brown the meat in a pot with a little oil to seal in the juices
- Place the beef into a pressure cooker and cover with hot water
- Dissolve the stock cubes in a cup of hot water and add them to the pot
- Seal the pressure cooker and cook for approximately 30 minutes once it reaches pressure
- While the meat is cooking, prepare the mashed potatoes by boiling them until tender, then mash them thoroughly
- Season the mashed potatoes with a pinch of black pepper and fold in mayonnaise to taste until you reach a smooth, creamy consistency
- After 30 minutes, remove the beef from the pressure cooker and slice it into uniform rounds
- Add the cooking cream (discarding any excess whey) and the remaining beef broth into the same pressure cooker
- Warm the sauce over low heat, adding the beef slices back in so they can soak up all the flavour
- Serve the beef hot with its creamy sauce alongside a generous portion of white rice
- Garnish the dish with the fresh, grated raw carrot before serving
Observations
This recipe for beef roast with cream is a true Brazilian kitchen staple, ideal for those who crave a hearty, soul-warming meal. Using a pressure cooker is the secret to getting the beef perfectly tender, while the velvety cream sauce adds a rich finish that pairs beautifully with plain steamed rice and your favourite sides.
It’s a versatile dish that works just as well for an everyday weeknight dinner as it does for a special weekend gathering. The combination of succulent, sliced beef bathed in a smooth, savoury sauce is what makes this a family favourite that never fails to impress.
