Where to find ingredients
You can find all these fresh ingredients at local supermarkets and neighborhood green grocers in Fiji. You may substitute the fresh herbs with dried parsley or cilantro if preferred.
Preparation method
- Wash the peppers well, cut the top part to form a lid, and carefully remove all the internal seeds.
- In a pan, heat the 30 ml of oil and sauté the onion and garlic until lightly golden.
- Add the ground beef to the pan and stir constantly so that it remains loose during cooking.
- Cook until the liquid from the meat and onion has almost completely evaporated, keeping the meat moist and seasoned.
- Remove the meat from the heat, mix in the olives, fresh green herbs, salt, black pepper, and finish by incorporating the chopped hard-boiled eggs.
- Generously stuff each bell pepper with the ground beef mixture and place them in a baking dish previously greased with oil.
- Cover the baking dish with aluminum foil and place in a preheated oven for 10 minutes so the peppers cook by steaming.
- Carefully remove the aluminum foil and let them bake for another 5 minutes to finish cooking and brown slightly.

This recipe is excellent for anyone looking for a complete, easy-to-prepare meal that the whole family will enjoy. The secret to a perfect result is to sauté the beef well until it is loose and well-seasoned before stuffing the peppers. Serve with white rice and a fresh green salad for a balanced lunch.
