Ingredients
1 kg lean beef ribs
1 beef stock cube
1 beef stock cube
Where to find ingredients
Lean beef ribs can be found at any local butcher or large supermarket meat counter; just ask for a leaner rack of ribs. Beef stock cubes are widely available in the seasoning or soup aisle of most grocery stores across Fiji. If you are unable to find the specific lean rib cut, a standard rack of beef ribs will also work beautifully, though it may result in a slightly richer finish.
Preparation method
- Prepare your pressure cooker for the cooking process
- Place the beef ribs and the beef stock cube directly into the pressure cooker
- Turn on the heat and wait until the liquid begins to boil
- Begin the pressure cooking phase
- Once the pressure cooker reaches full pressure and starts whistling, let it cook for 10 minutes
- Keep the lid on and do not release the pressure manually yet
- Prepare to incorporate the stock flavor
- Carefully open the cooker, and give it a good stir so the meat is evenly coated with the stock
- Begin the final stage of cooking
- Close the cooker again and bring it back to a boil
- After reaching pressure again, cook for another 20 minutes on low heat
- Finish up and get ready to serve
- Open the pot and check that the meat is perfectly tender
- Serve the dish hot
- Note: It might look like the meat is browning or catching at the bottom, but this is perfectly normal and adds to the flavor
- The finished ribs should have that characteristic barbecue-like appearance, especially when using leaner cuts
Observations
Pressure cooker beef ribs are a classic home-cooked staple in Brazil, delivering juicy, flavorful meat with minimal effort. This recipe uses leaner cuts of beef ribs and a savory beef stock base to create a rich, comforting dish that is surprisingly easy to pull off. Using the pressure cooker cuts down the cooking time significantly while ensuring the meat becomes incredibly soft, mimicking the depth of flavor you'd expect from a slow-cooked barbecue. It’s a perfect no-fuss method for getting that authentic, satisfying result in your own kitchen.
