Classic Virado à Paulista: Step-by-Step Recipe (Virado à paulista)

Ingredients

500 g pork chops
30 ml olive oil
5 g salt
1 tsp lemon zest
15 ml lemon juice
50 g bacon, chopped
5 g garlic, minced
75 g medium onion, chopped
150 g cassava flour (farinha de mandioca)
400 g cooked carioca beans, drained
400 ml bean cooking broth
2.5 g salt
5 g fresh parsley, chopped

Where to find ingredients

You can find pork chops, bacon, onions, and fresh produce at any local market or supermarket in Fiji. For the 'farinha de mandioca' and 'feijão-carioquinha' (carioca beans), check the international or specialty dry goods aisles in larger grocery stores. If you cannot find carioca beans, pinto beans are the closest available substitute.

Preparation method

  1. Season the pork chops with olive oil, salt, lemon zest, and lemon juice. Cover and let them marinate in the refrigerator for 30 minutes.
  2. In a medium pan, fry the bacon over high heat for 3 minutes until golden brown.
  3. Add the minced garlic and onion, and sauté for another 2 minutes.
  4. Add the cassava flour and toast lightly, stirring constantly.
  5. Fold in the cooked beans and the bean broth. Season with salt and mix gently.
  6. Remove from the heat and stir in the chopped parsley.
  7. Heat the remaining olive oil in a large skillet over high heat.
  8. Fry the seasoned pork chops for 2 minutes on each side until golden and cooked through.
  9. Serve the pork chops alongside the bean virado and finish with the remaining lemon zest.
