Ingredients
1 kg salted beef (carne-seca)
2 large onions
1/3 cup ghee (manteiga de garrafa)
Salt to taste
2 large onions
1/3 cup ghee (manteiga de garrafa)
Salt to taste
Where to find ingredients
Salted beef is available at local butcher shops or specialty meat markets; if unavailable, use high-quality corned beef. Ghee can be found in the baking or international foods aisle of most supermarkets. Onions and basic pantry staples are available at any local market.
Preparation method
- Cut the salted beef into pieces approximately 7 cm in size
- Rinse the beef thoroughly under running water to remove excess surface salt
- Place the beef in a bowl, cover with cold water, and refrigerate for at least 12 hours, changing the water at least 3 times during the soaking process
- After soaking, drain the beef and rinse it again under running water
- Transfer the beef to a pressure cooker and cover with fresh water, ensuring it does not exceed two-thirds of the pot's capacity
- Secure the lid and place over high heat
- Once the cooker reaches pressure, reduce the heat to low and cook for 30 minutes
- Turn off the heat and allow the pressure to release naturally before opening the lid
- Remove the cooked meat from the pot using a slotted spoon and place it in a dish
- While the meat is still warm, shred it using two forks, discarding any pieces of fat or gristle
- Alternatively, shred the meat using a stand mixer on low speed until the desired texture is reached
- Peel the onions and slice them into half-moons approximately 1 cm thick
- Heat a large frying pan over medium heat
- Add the ghee to the pan and then stir in the sliced onions with a pinch of salt
- Sauté the onions for about 5 minutes until they are softened
- Add the shredded beef to the frying pan with the onions
- Stir and cook for another 5 minutes, then taste and adjust the seasoning if needed
- Serve immediately
