Where to find ingredients
You can find all these ingredients at your local supermarket. Look for the hearts of palm in the international foods or canned vegetables aisle. For the olives, the specialty olive bar or the canned goods section are great options.
Preparation method
- In a medium bowl, gradually mix the flour, butter, and salted water
- Work the mixture by hand until you achieve a uniform dough that no longer sticks to your fingers
- Knead the dough on a floured surface until it becomes smooth and homogeneous
- Cover the dough and let it rest for 10 minutes to make it easier to roll out
- Heat the olive oil in a pan and sauté the onion for 2 minutes over high heat
- Add the tomato, hearts of palm, salt, pepper, fresh herbs, oregano, and olives
- Cook the filling for 5 minutes over medium heat, stirring well, then remove from heat
- Allow the filling to cool completely before assembling the empanadas
- Roll out portions of the dough with a rolling pin until they reach 2mm in thickness
- Cut circles out of the dough using a round cutter or the rim of a large glass
- Place the filling in the center, fold the dough over, and seal the edges by pressing with your fingers
- Arrange on a baking sheet, brush with the egg yolk, and bake in a preheated oven at 400°F for 25 minutes
Observations
The empanada is a classic that has earned its place on Brazilian tables thanks to its incredible versatility. This version features a melt-in-your-mouth dough paired with a straightforward hearts of palm filling. You can easily vary the flavor profile by using chicken, beef, or tuna. The secret is to let the filling cool down completely before folding the dough to ensure the crust stays crispy and prevents the pockets from opening in the oven.
