Where to find ingredients
Find fresh green peppers, ground beef, and aromatics at local supermarkets or vegetable markets in Barbados. Use high-quality local produce for best results.
Preparation method
- Wash the peppers well, cut off the top part to create a lid and carefully remove all internal seeds
- In a pan, heat the oil and sauté the onion and garlic until lightly golden
- Add the ground beef to the pan and stir constantly so that it stays loose during cooking
- Cook until the liquid from the meat and onion has almost completely evaporated, keeping the meat moist and seasoned
- Remove the meat from the heat, mix in the olives, parsley and chives, salt, black pepper and finish by incorporating the chopped boiled eggs
- Stuff each pepper generously with the ground beef mixture and place them in a baking dish previously greased with oil
- Cover the dish with aluminum foil and place in a preheated oven for 10 minutes so the peppers cook in the steam
- Remove the aluminum foil carefully and bake for 5 more minutes to finish cooking and lightly brown
