Pressure-Cooker Beef Stew (Carne de panela de pressão)

Ingredients

1 kg beef (chuck, shoulder, or shin) or pork loin, cut into large chunks
Optional: medium potatoes, peeled and sliced into thick rounds
3 to 4 beef bouillon cubes
8 large onions, sliced into thick rings

Where to find ingredients

Find fresh beef and root vegetables at local supermarkets or independent butchers across Barbados. Beef bouillon cubes are available in the seasoning aisle of any grocery store.

Preparation method

  1. Line the bottom of the pressure cooker with half of the onion rings.
  2. Crumble 1 or 2 bouillon cubes over the bed of onions.
  3. Arrange the meat chunks evenly over the onions.
  4. Season the meat by crumbling the remaining bouillon cubes over the top.
  5. Layer the remaining onion rings over the meat to cover it completely.
  6. Seal the pressure cooker lid and cook over medium heat for approximately 25 minutes once pressure is reached.
  7. Turn off the heat and allow the pressure to release naturally.
  8. If you wish to add potatoes, move aside the top layer of onions, add the potato rounds, reseal, and cook for another 10 minutes once pressure is reached.
  9. Always wait for the pressure to release naturally before opening the lid.

Its sheer convenience and the way it transforms tougher cuts of meat into succulent, fork-tender bites make it a weekday dinner hero. With just a handful of pantry staples and the power of pressurized cooking, you can unlock a rich depth of flavor that is truly impressive. This recipe serves as a versatile foundation for any meal, best enjoyed alongside a serving of steamed white rice and a crisp, refreshing garden salad.
