Ingredients
3 cups guava pulp, scooped from the skins
¾ cup honey
1 cup water
Lemon juice to taste
¾ cup honey
1 cup water
Lemon juice to taste
Where to find ingredients
Fresh guavas can be found at local greengrocers or the fresh produce section of supermarkets like Woolworths or Pick n Pay. If fresh guavas are out of season, ensure you choose high-quality, ripe fruit for the best flavour. Honey is readily available in the pantry staples aisle of any local store.
Preparation method
- Place the guava pulp, honey, and water into a large heavy-bottomed pot.
- Bring the mixture to a boil over medium-high heat.
- Reduce the heat and simmer gently for 10 minutes.
- Stir occasionally and skim off any foam that rises to the surface using a spoon.
- Transfer the cooked mixture into a blender jug.
- Pulse on a low setting just enough to process the pulp without breaking up the hard seeds.
- Pass the purée through a fine-mesh sieve set over a mixing bowl.
- Use a wooden spoon to press the mixture through, extracting all the liquid while keeping the seeds and fibre in the sieve.
- Discard the seeds and remaining pulp left in the sieve.
- Finish by stirring the lemon juice into the strained purée.
