Peach Pavê (Pavê de pessego)

Ingredients

1 litre milk
2 tins condensed milk
1 egg
2 tablespoons cornflour
1 packet champagne biscuits
1 tin peaches in syrup
1 tin cream
3 tablespoons sugar

Where to find ingredients

Look for the ingredients in the baking aisle, dairy section and tinned fruit section of major supermarkets in South Africa. If needed, use ladyfingers as a substitute for champagne biscuits, and custard powder may be used only as a substitute for cornflour where appropriate.

Preparation method

  1. Combine the cornflour
  2. the milk
  3. the condensed milk and the egg in a saucepan
  4. Cook over low heat
  5. Stir constantly until the mixture thickens and reaches the texture of a thick porridge
  6. Line the base of a glass dish with a layer of champagne biscuits
  7. Pour the cream over the biscuits while it is still hot
  8. Cut the peaches into medium-sized cubes
  9. Spread the peach cubes over the cream layer
  10. Prepare the topping by whisking the sugar with the cream in a separate bowl
  11. Cover the peach layer with this mixture
  12. Protect the dish with aluminium foil
  13. Chill for at least 6 hours before serving
