Where to find ingredients
Find eggs, milk, gelatine, and cream at any major local supermarket. Ground walnuts can be found in the baking or nut aisle of health food stores or large grocery retailers. Chocolate drink powder is available in the breakfast cereal aisle.
Preparation method
- Separate the egg yolks from the whites.
- In a cold saucepan, combine the milk and the yolks, passing the yolks through a sieve first.
- Stir in the chocolate drink powder and the condensed milk.
- Place over medium heat and cook for about 15 minutes, stirring continuously until the mixture thickens into a cream.
- Remove the pan from the heat.
- Fold in the ground walnuts and the table cream.
- Add the dissolved unflavoured gelatine to the mixture.
- Gently fold in the stiffly beaten egg whites until the mixture is homogeneous.
- Transfer the mousse mixture into a serving dish.
- Place in the freezer for approximately 2 hours until it reaches a mousse consistency.
- Monitor closely to prevent the mixture from freezing solid.
- Garnish the surface with whole walnuts before serving.
- Keep the dessert in the refrigerator after it has been served for the first time.
