1 head of broccoli, chopped

Where to find ingredients
You can find fresh broccoli, potatoes, milk and butter at local supermarkets like Woolworths, Pick n Pay or Checkers. Requeijão (a creamy Brazilian cheese spread) can often be sourced at specialty delis or ethnic grocery stores. As a substitute if unavailable, you may use a high-quality cream cheese or double cream, though the final flavour profile will differ.
Preparation method
- Melt the butter in a pan, add the garlic and sauté the broccoli for approximately 5 minutes
- Season the broccoli with salt to taste and set aside
- In a separate pan, melt the butter and gently brown the finely chopped onion
- Add the mashed potatoes, milk and salt to the pan for the mash
- Mix all the ingredients for the mash well and leave to cook over a low heat for 5 minutes until smooth
- Grease a baking dish with a little butter and spread all of the sautéed broccoli over the bottom
- Distribute the requeijão evenly over the layer of broccoli
- Cover everything with the potato mash and finish by spreading the mozzarella over the top
- Place in a preheated oven for 15 to 20 minutes until the cheese is nicely golden and gratinated
Observations
The broccoli escondidinho is a vegetarian favourite that wins everyone over with its combination of creamy mash and the distinct flavour of sautéed broccoli. This recipe is simple to prepare and comes together quickly in the oven.
Top tip: for an extra smooth mash, mash the potatoes whilst still hot and use a whisk when adding the milk. If you fancy a special touch, sprinkle some extra parmesan cheese on top before placing it under the grill to gratinate.
