Method

  1. Peel the pumpkin and cut the flesh into cubes of about 2 cm
  2. Mince the garlic cloves very finely
  3. Heat a large pot or skillet over medium heat with the olive oil
  4. Add the garlic and sauté for 1 minute, just to infuse the oil, being careful not to burn it
  5. Add the pumpkin cubes and salt to the pot
  6. Stir the ingredients occasionally for 10 minutes, until the pumpkin begins to soften
  7. Cover the pot and reduce the heat to low
  8. Let it cook for 5 minutes for the pumpkin to finish softening in its own steam
  9. Remove the lid and continue stirring while mashing the pieces with the back of a wooden spoon, until you reach your preferred texture
  10. Turn off the heat and serve immediately
