Where to find ingredients
Pumpkin, garlic, olive oil, and salt can be found at most grocery stores and supermarkets.
Method
- Peel the pumpkin and cut the flesh into cubes of about 2 cm
- Mince the garlic cloves very finely
- Heat a large pot or skillet over medium heat with the olive oil
- Add the garlic and sauté for 1 minute, just to infuse the oil, being careful not to burn it
- Add the pumpkin cubes and salt to the pot
- Stir the ingredients occasionally for 10 minutes, until the pumpkin begins to soften
- Cover the pot and reduce the heat to low
- Let it cook for 5 minutes for the pumpkin to finish softening in its own steam
- Remove the lid and continue stirring while mashing the pieces with the back of a wooden spoon, until you reach your preferred texture
- Turn off the heat and serve immediately
Notes
With a slightly rustic texture, this mash is a practical and healthy alternative to diversify everyday meals.
