Roasted vegetables with paprika (Legumes assados com páprica)

Ingredients

3 tablespoons olive oil
8 radishes
1/2 cauliflower (2 1/2 cups, cut into medium florets)
2 carrots
salt and freshly ground black pepper to taste
1 1/2 teaspoons paprika

Where to find ingredients

Vegetables can typically be found at local grocery stores and farmers' markets. Olive oil, paprika, salt, and pepper are pantry staples available at most supermarkets.

Preparation method

  1. Preheat oven to 425°F (220°C)
  2. Wash cauliflower florets in a bowl of water
  3. Remove florets from water with your hands, allowing dirt to remain at the bottom of the bowl
  4. Drain cauliflower well in a colander
  5. Thoroughly clean the radish skins under running water with a brush
  6. Dry the radishes and cut them in half, or into quarters if they are large
  7. Peel the carrots and cut them in half crosswise
  8. Cut the narrower end of the carrots into four lengthwise strips
  9. Cut the wider end of the carrots into six lengthwise strips
  10. Distribute all vegetables on a large baking sheet
  11. Drizzle vegetables with olive oil
  12. Sprinkle with paprika, salt, and black pepper
  13. Mix everything very well to ensure each piece is coated with seasoning and oil
  14. Spread vegetables in the baking sheet, leaving space between them so they roast evenly and become well-browned
  15. Bake for approximately 30 minutes
  16. Turn vegetables with a spatula halfway through cooking to brown all sides
  17. Remove from oven once tender and golden brown
  18. Serve immediately
