Where to find ingredients
You can find these fresh ingredients at local markets or supermarkets like Shoprite and Mlimani City Mall, focusing on the fresh produce section for vegetables and the pantry aisle for coconut milk and staple ingredients.
Preparation method
- Cut the aubergines into small cubes and place them in a colander
- Sprinkle salt over the aubergine and let it rest for 2 to 3 hours
- Wash the cubes well, squeeze them gently to remove excess water, and set aside
- Boil the peeled cassava in water until it is very soft and set aside
- Sauté the garlic, onion, tomato, and bell pepper in olive oil, then add the aubergine, bay leaf, black pepper, and stock cube, sautéing until browned
- Blend the cassava with the coconut milk in a blender, mix it into the sautéed base, adjust the salt, finish with fresh parsley and spring onions, and serve while very hot
Observations
Aubergine stew is a brilliant and light alternative to the classic shrimp version, maintaining all its richness with a cassava base. The secret to success lies in resting the aubergine in salt, which draws out the natural bitterness and ensures the perfect texture. It is a comforting recipe that is practical for everyday cooking and ideal for serving with fluffy white rice.
