Zucchinis, lemons, and coriander seeds are readily available at local vegetable markets (masoko) or supermarkets. Fresh coriander seeds can be found in spice stalls; if unavailable, a small amount of ground coriander can be used as a substitute.
Preparation method
- Wash the zucchini skin thoroughly under running water using a vegetable brush
- Dry with a clean kitchen towel
- Remove and discard the ends
- Cut the zucchini crosswise to separate the thicker part from the thinner end
- Slice the thick part in half lengthwise and cut each half into three strips to create sticks
- Divide the thin part in half crosswise so all pieces are of similar size
- Cut each of these pieces into four parts
- Heat a non-stick skillet over medium heat
- Add a drizzle of olive oil and arrange the zucchini pieces with the cut side facing down
- Grill for about 2 minutes until golden brown
- Lightly crush the coriander seeds in a mortar to release the aroma
- Flip the sticks using tongs to brown the opposite side
- Add the coriander seeds, season with salt, and add a little more olive oil
- Sauté for another 1 minute until the zucchini is tender and seasoned
- Finish by turning off the heat and incorporating the lemon juice
- Serve immediately
