Brazilian Creamy Custard (Espera Marido)

Ingredients

1 can (395g) condensed milk
1 can measure (approx. 400ml) whole milk
3 whole cloves
1 cinnamon stick
3 large eggs
3 large egg yolks
Ground cinnamon for dusting

Where to find ingredients

You can find condensed milk, fresh whole milk, eggs, cloves, and cinnamon sticks at most local supermarkets and smaller neighbourhood shops. Look for these items in the dairy and baking aisles, or in the spice section for whole cloves and cinnamon sticks.

Preparation method

  1. In a medium saucepan, combine the condensed milk, whole milk, cloves, and cinnamon stick
  2. Heat the mixture over medium heat until it just begins to simmer. Do not boil vigorously
  3. In a separate bowl, lightly whisk together the whole eggs and egg yolks
  4. Slowly temper the eggs by gradually whisking about half a cup of the hot milk mixture into the beaten eggs. This prevents them from scrambling
  5. Pour the tempered egg mixture back into the saucepan with the remaining milk mixture
  6. Reduce the heat to low and cook gently, stirring occasionally with a wooden spoon to achieve a slightly rustic texture. Avoid constant stirring to maintain some texture
  7. Continue to cook until the custard thickens enough to coat the back of the spoon. This is the 'doce de colher' stage
  8. Remove the cloves and cinnamon stick. Pour the custard into a serving dish or individual bowls
  9. Let it cool, then chill in the refrigerator. Dust generously with ground cinnamon before serving

Observations

This classic Brazilian dessert boasts a velvety smooth texture and a fragrant aroma from its warm spices, making it a wonderful choice whether served cold or at ambient temperature. It's a fuss-free recipe that brings a touch of homemade goodness to any occasion.
