Ingredients
1 tin sweetened condensed milk (395 g)
Where to find ingredients
Look for tinned sweetened condensed milk in supermarkets, mini-markets and baking-supply shelves, often near baking ingredients, long-life milk or dessert products. The ideal ingredient is sweetened condensed milk; caramel spread is only a substitute if labelled as such.
Preparation method
- Remove the paper label from the tin of sweetened condensed milk
- With a small knife, remove any glue residue so it does not clog the pressure cooker valve
- Put the tin of sweetened condensed milk inside the pressure cooker
- Add water to the cooker until it covers the tin, leaving about two fingers of water above it
- Close the pressure cooker and put it on medium heat
- As soon as the cooker starts whistling, lower the heat if necessary and cook for 20 minutes
- Switch off the heat and wait for the steam to release naturally. Do not force the steam out
- When all the pressure has released, open the cooker lid carefully
- Use kitchen tongs to remove the hot tin from the cooker and avoid burns
- Let the tin cool completely for at least 2 hours before opening
- For the best result, make the doce de leite a day before you plan to serve it
