1 cup finely grated coconut, about 100 g
2 cups sugar, about 400 g
Where to find ingredients
Look for fresh sweet corn and corn husks at a local open market or produce market, grated coconut in the baking aisle, and sugar plus salt at any neighbourhood grocery. If needed, use kitchen twine as a substitute for corn husks ties.
Preparation method
- Remove the kernels from the corn ears, scraping or cutting close to the cob
- Blend with the water until you get a smooth mixture
- Add the grated coconut and sugar to the mixture and stir well until all the ingredients are combined
- Take a portion of the batter and wrap it in the corn husk, forming a tightly sealed cylinder
- Tie the ends with a piece of husk or kitchen twine
- Bring a large pot to the heat and boil plenty of water
- When the water is boiling, carefully place the pamonhas in one by one
- Make sure the water is boiling vigorously before adding the pamonhas so they do not fall apart
- Cook for about 40 minutes, using a slotted spoon to remove the pamonhas from the hot water
- After cooking, let the pamonhas cool in a cool place before serving
