Where to find ingredients
In Trinidad and Tobago, you can find these ingredients at supermarkets, neighbourhood groceries, baking-supply shops, and public markets, especially where nuts, biscuits, dairy, and eggs are sold.
Preparation method
- Blend the nuts in a blender until they become a fine meal.
- In a saucepan, mix the ground nuts with the table cream and a pinch of salt.
- Place over low heat, stirring all the time, until it thickens slightly.
- Remove from the heat and set aside to cool.
- In a large bowl, beat the strained egg yolks with the butter and sugar until the mixture is pale and fluffy.
- Gently fold the nut and cream mixture into the egg yolk cream, mixing from the bottom upwards so it keeps its light texture.
- In a deep plate, mix a little milk with a few spoonfuls of the cashew cream to moisten the biscuits.
- In the bottom of a baking dish or serving dish, make a layer with the biscuits moistened in the milk mixture.
- Cover with a layer of the cashew cream.
- Repeat the biscuit and cream layers until all the ingredients are used, finishing with a layer of cream.
- If you like, sprinkle chopped nuts over the top.
- Cover the dish with plastic wrap and place it in the freezer for at least 4 hours, or until well set.
