Ingredients
1 envelope unflavored powdered gelatin
6 tablespoons cold water
1 can sweetened condensed milk
1 can milk (use the condensed milk can as the measure)
2 cups plain yogurt
6 medium red guavas
1/2 cup sugar
1 1/2 cups water (for the sauce)
1/2 cup water (optional, for the sauce)
6 tablespoons cold water
1 can sweetened condensed milk
1 can milk (use the condensed milk can as the measure)
2 cups plain yogurt
6 medium red guavas
1/2 cup sugar
1 1/2 cups water (for the sauce)
1/2 cup water (optional, for the sauce)
Where to find ingredients
Look for the ingredients in the dairy aisle, baking section, and fresh produce section of your local supermarket or market. If you can’t find red guavas, choose ripe guavas of any variety; they are the closest substitute.
Preparation method
- Hydrate the powdered gelatin in 6 tablespoons of cold water
- Set the hydrated gelatin over a double boiler until it dissolves completely
- In a blender, blend the condensed milk, milk, plain yogurt, and dissolved gelatin
- Pour the cream into a ring mold previously moistened with water
- Refrigerate for about 4 hours, or until the flan is set
- While the flan chills, prepare the sauce: peel and cut the guavas into cubes
- Place the guava cubes in a saucepan with the sugar and 1 1/2 cups of water
- Cook over low heat for about 20 minutes, or until the guavas are very soft and beginning to break down
- Remove the pan from the heat and transfer the contents to a blender. Blend until smooth
- Return the guava purée to the pan and cook over low heat for another 15 minutes, stirring occasionally, until the sauce thickens
- If the sauce becomes too thick during cooking, add the optional half cup of water to adjust the consistency
- Let the guava sauce cool completely before serving it over the flan
