Ingredients
100 g dehydrated shredded coconut
120 ml warm water
4 eggs
3 egg yolks
480 g sugar
30 g butter
120 ml warm water
4 eggs
3 egg yolks
480 g sugar
30 g butter
Where to find ingredients
You can find these ingredients at local supermarkets, grocery stores, and specialty food aisles. Opt for fresh eggs and standard desiccated coconut, which are readily available across all major retail outlets.
Preparation method
- Mix the shredded coconut with the warm water in a small bowl.
- Let the coconut rest for about 5 minutes until well hydrated.
- Place the hydrated coconut, eggs, egg yolks, sugar, and butter in a blender and pulse just enough to mix.
- Grease a 1.5-liter microwave-safe dish with butter and sprinkle with sugar, then pour the mixture in.
- Cook in the microwave at medium power for 9 to 12 minutes until the quindão starts to set.
- Remove from the microwave, let it cool slightly, and carefully unmold onto a serving plate.
- Wait for it to cool completely before serving to ensure the ideal texture.
Observations
The quindão is a larger and very popular variation of the traditional quindim. This simplified version uses the microwave to ensure speed without losing the characteristic flavor of coconut and eggs. Tip: use a microwave-safe mold to ensure even cooking.
