Preparation method
- Place the guava pulp, honey, and water in a large saucepan.
- Bring to a boil over medium-high heat.
- Reduce the heat to maintain a gentle simmer for 10 minutes.
- Stir the mixture occasionally and skim off any foam that rises to the top with a spoon.
- Transfer the cooked mixture to a blender.
- Pulse on low speed just enough to process the pulp without breaking the hard seeds.
- Pass the purée through a fine-mesh sieve set over a bowl.
- Use a wooden spoon to press the mixture through to extract all the liquid, while catching the seeds and remaining pulp in the sieve.
- Discard the seeds and pulp left in the sieve.
- Finish by stirring the lemon juice into the strained purée.
