Ingredients
3 cups guava pulp, peeled
¾ cup honey
1 cup water
Lemon juice to taste
¾ cup honey
1 cup water
Lemon juice to taste
Where to find ingredients
Fresh guavas can be found at local Kenyan green grocers or supermarkets in the fruit and vegetable section. Honey is widely available in the pantry aisles of major retailers. For the best result, select ripe, fragrant guavas.
Preparation method
- Combine the guava pulp, honey, and water in a large saucepan.
- Place over medium-high heat and bring to a boil.
- Reduce the heat to maintain a gentle simmer for 10 minutes.
- Stir the mixture occasionally and skim off any foam that rises to the surface with a spoon.
- Transfer the cooked mixture to a blender.
- Pulse on low speed just enough to process the pulp without breaking up the hard seeds.
- Pass the purée through a fine-mesh sieve placed over a bowl.
- Use a wooden spoon to press the mixture through, extracting all the liquid while retaining the seeds and excess pulp in the sieve.
- Discard the seeds and remaining solids left in the sieve.
- Finish by stirring the lemon juice into the strained purée.
