Ingredients
100 g desiccated grated coconut
120 ml warm water
4 eggs
3 egg yolks
400 g sugar
30 g butter
120 ml warm water
4 eggs
3 egg yolks
400 g sugar
30 g butter
Where to find ingredients
You can find desiccated coconut, eggs, sugar, and butter in the baking or dairy aisles of local supermarkets throughout Kenya. Use a heat-resistant glass or microwave-safe silicone mold.
Preparation method
- Mix the grated coconut with the warm water in a small bowl
- Let the coconut rest for about 5 minutes until it is well hydrated
- Place the hydrated coconut, eggs, egg yolks, sugar, and butter in a blender and pulse just enough to mix
- Grease a 1.5-litre microwave-safe refractory dish with butter and sprinkle with sugar, then pour in the mixture
- Cook in the microwave at medium power for 9 to 12 minutes until the Quindão begins to set
- Remove from the microwave, let it cool down, and carefully turn it out onto a serving plate
- Wait for it to cool completely before serving to ensure the ideal texture
Observations
The Quindão is a larger and very popular variation of the traditional Quindim. This simplified version uses the microwave to ensure quick results without losing the characteristic flavor of coconut and eggs. Tip: use a microwave-safe mold to ensure even cooking.
