Where to find ingredients
You can find fresh produce like eggplants, tomatoes, and bell peppers at local markets or supermarkets. Cassava is often available in the frozen section or produce aisles of specialized grocery stores. Use fresh herbs like parsley and chives to garnish the dish.
Preparation method
- Dice the eggplants into small cubes and place them in a colander
- Sprinkle salt over the eggplant and let it rest for 2 to 3 hours
- Rinse the cubes well, squeeze gently to remove excess water, and set aside
- Boil the peeled cassava in water until very tender and set aside
- Sauté the garlic, onion, tomato, and bell pepper in olive oil, then add the eggplant, bay leaf, black pepper, and bouillon, cooking until golden brown
- Blend the cooked cassava with the coconut milk in a blender, stir into the sautéed mixture, adjust the salt, garnish with parsley and chives, and serve hot
Observations
This eggplant stew is a fantastic and light alternative to the classic shrimp version, retaining all the creaminess thanks to the cassava base. The secret to its success is letting the eggplant sit with salt, which draws out its natural bitterness and ensures the perfect texture. It is a comforting, practical everyday dish that is ideal for serving over fluffy white rice.
