Find fresh zucchini, lemons, and coriander seeds at local grocers or markets. If you cannot find fresh coriander seeds, you may use a pinch of ground coriander as a substitute, though whole seeds provide a superior texture.
Preparation method
- Wash the zucchini skin thoroughly under running water using a vegetable brush
- Pat dry with a clean kitchen towel
- Trim and discard the ends
- Slice the zucchini crosswise to separate the thicker end from the thinner one
- Slice the thick part in half lengthwise and cut each half into three strips to create batons
- Cut the thin part in half crosswise so all pieces are of similar size
- Cut each of these pieces into four
- Heat a non-stick skillet over medium heat
- Add a drizzle of olive oil and arrange the zucchini pieces cut-side down
- Grill for about 2 minutes until golden brown
- Lightly crush the coriander seeds in a mortar and pestle to release their aroma
- Flip the batons with kitchen tongs to brown the opposite side
- Add the coriander seeds, season with salt, and add a little more olive oil
- Sauté for another minute until the zucchini is tender and seasoned
- Finish by turning off the heat and stirring in the lemon juice
- Serve immediately
