Where to find ingredients
You can find bulgur wheat, fresh parsley, and mint at local grocery stores or smaller markets in Funafuti. Look for the fresh produce section for herbs and vegetables. If bulgur is unavailable, you may use fine-grade cracked wheat as a substitute.
Preparation method
- Place the bulgur wheat in a mixing bowl.
- Cover with water and let it soak for 2 hours.
- Rinse the wheat thoroughly under cold running water.
- Drain the wheat well using a fine-mesh strainer.
- Squeeze the bulgur firmly with your hands to remove any excess moisture.
- Rinse the chopped onion under cold water and pat dry or drain well.
- In a large bowl, combine the prepared bulgur, onion, and all remaining ingredients, except for the tomatoes.
- Set the diced tomatoes aside to be added just before serving.
- Cover the container and refrigerate for at least 8 hours to allow the flavors to develop.
- Fold in the diced tomatoes right before serving to maintain their freshness and texture.
Observations
This recipe perfectly balances the chewy texture of cracked wheat with the crisp brightness of fresh vegetables and herbs. Letting the salad chill in the refrigerator is crucial, as it allows the dressing and aromatics to meld, creating a truly harmonious flavor profile.
