Where to find ingredients
You can find these ingredients at local supermarkets in the canned goods, spice, and fresh produce sections. Look for dried chickpeas in the dried beans aisle, paprika in the spices section, and fresh garlic and onion in the produce aisle.
Preparation method
- Place the chickpeas in a large bowl.
- Cover with three cups of water.
- Cover and let hydrate for eight hours.
- Discard the soaking water and place the chickpeas in a pressure cooker.
- Add three cups of clean water and the bay leaf.
- Close the cooker and bring to high pressure over high heat.
- Once pressure is reached, reduce heat and cook for 25 minutes.
- Turn off the heat and let the pressure release naturally before opening.
- Chop the onion and garlic well.
- Heat the olive oil in a skillet over medium heat.
- Sauté the onion with a pinch of salt for five minutes until golden.
- Add the garlic and paprika, and sauté for one minute.
- Add two scoops of the cooked chickpeas with some broth to the skillet.
- Mash these chickpeas with a spatula until forming a purée.
- Mix this creamy sauté back into the remaining chickpeas in the pressure cooker.
- Cook over medium heat, uncovered, for an additional 10 minutes.
- Adjust salt and pepper to taste.
- Finish with a drizzle of olive oil before serving.
Observations
This dish is a fantastic everyday meal option that combines healthiness with simplicity. The secret to a thick and velvety sauce is mashing a small portion of the cooked chickpeas before finishing the dish.
