Where to find ingredients
You can find all fresh produce and staples at local markets and grocery stores. Choose firm eggplants and fresh cassava for the best results. As a substitute for fresh cassava, you can use frozen cassava chunks found in the freezer section of most supermarkets.
Preparation method
- Cut the eggplants into small cubes and place them in a colander
- Sprinkle salt over the eggplant and let it rest for 2 to 3 hours
- Wash the cubes thoroughly, squeeze gently to remove excess water, and set aside
- Boil the peeled cassava in water until very tender and set aside
- Sauté the garlic, onion, tomato, and bell pepper in olive oil, then add the eggplant, bay leaf, pepper, and bouillon cube, cooking until golden brown
- Blend the cassava with the coconut milk in a blender, stir into the sautéed mixture, adjust the salt, garnish with fresh herbs, and serve while very hot
Observations
This eggplant stew is an excellent and light alternative to the classic shrimp version, retaining all the signature creaminess from the cassava base. The key to success is letting the eggplant sit with salt, which removes its natural bitterness and ensures the perfect texture. It is a comforting dish, practical for everyday meals, and ideal to serve alongside fluffy white rice.
