Preparation method
- Combine the guava pulp, honey, and water in a large saucepan
- Place over medium-high heat and bring the mixture to a boil
- Turn the heat down to low and let it simmer gently for 10 minutes
- Give it an occasional stir and skim off any foam that rises to the top with a spoon
- Carefully transfer the cooked mixture into a blender

- Place a fine-mesh sieve over a mixing bowl
- Use a wooden spoon to press the mixture through the sieve to extract all the liquid, leaving the seeds and fibrous bits behind
- Discard the seeds and tough pulp remaining in the sieve
- Finish by stirring in a squeeze of fresh lemon juice to balance the flavour of your strained puree
