Where to find ingredients
You can find sweetened condensed milk, table cream, and fresh passion fruits in the baking and fresh produce aisles of local supermarkets and grocery stores across Eswatini. If concentrated passion fruit juice is unavailable, strained fresh passion fruit juice makes a great substitute.
Preparation method
- In a blender, add the sweetened condensed milk, table cream, and concentrated passion fruit juice
- Blend until you achieve a smooth and creamy mixture
- Transfer the mixture to a nice serving dish or individual ramekins
- Chill in the fridge for at least 2 hours, or until firmly set
- If you want to speed things up, you can place it in the freezer for about 30 to 40 minutes
- While the mousse chills, prepare the syrup: in a saucepan, combine the sugar and water
- Heat over medium and cook until the sugar dissolves and a light syrup forms
- Add the passion fruit pulp to the syrup, stirring gently
- Cook for another 1 or 2 minutes, just to warm through and bring the flavours together
- Remove from the heat
- Once the mousse has set, spoon the passion fruit syrup over the top before serving
