Easy Creamy Papaya Sorbet with Cashews

Ingredients

100g caster sugar
2 tablespoons chopped cashew nuts
2 medium papayas, with fresh pulp
250ml chilled double cream for whipping

Where to find ingredients

In Eswatini, you can find fresh papayas at local markets like the Manzini Market or major supermarkets such as Pick n Pay or Spar. Opt for papayas that are vibrant yellow or orange with a slight give when pressed. Double cream for whipping is available in the dairy section of most well-stocked supermarkets; ensure it is very cold before whisking. Cashew nuts can usually be found in the snack or baking aisles of supermarkets, or at health food stores in larger towns. If fresh cashews aren't available, roasted, unsalted peanuts make a fine local crunchy alternative.

Preparation method

  1. Halve the papayas and scoop out all the seeds
  2. Take the pulp from one of the papayas and blend it until you have a smooth purée
  3. Dice the pulp of the second papaya into small, bite-sized pieces and set them aside
  4. Whip the double cream and sugar together in a mixing bowl until you reach firm peaks
  5. Gently fold the papaya purée into the whipped cream, being careful to keep the mixture light and airy
  6. Add the diced papaya chunks into the mix and fold them in delicately
  7. Pour the cream mixture into a freezer-safe container or ice cube trays and freeze for at least 4 hours
  8. To unmold, briefly run the bottom of the container under warm water for a quick release
  9. Slice the sorbet into cubes, serve in bowls, and sprinkle the chopped cashews over the top
  10. If you like, squeeze a few drops of fresh lime juice over the bowls for a bright, zesty finish

Observations

This papaya sorbet is a Brazilian-inspired treat that blends the natural sweetness of ripe papaya with a luxurious, airy texture. It's incredibly straightforward to make and serves as a fantastic light dessert for warm weather. The combination of smooth papaya purée, whipped cream, and nutty cashews makes it an irresistible choice for both casual family afternoons and more festive gatherings.
